I've scoured the files in my admin folder trying to find the code to customize the include 'admin/show_stats.php' for, obviously, showing the fanlisting stats. Does anyone know where to find the code snippet so I can change some of the words/lines/phrases?

Do you mean the stats of your owned fanlistings that you can see when you chose a category or something like that?
If that's what you mean you don't need to change a file you can do that through the enth admin panel > owned > template. :)
